Homemade Cafe Rio Pork

I found a good recipe for Cafe Rio Pork. I bought a lot of pork . I had to use 3 crock pots and 1 roasting oven. And the best was Michelle crock pot. I don't know why. But it cooked and shredded so much easier. I wish that I took pictures of the boys helping me put the brown sugar and the Dr. Pepper. They had such a good time helping me. It turned out way yummy we served it with rolls. I bought soft rolls not a good idea they were to soft. The meat just soaked them up. The leftovers have been used for salad and with tortillas. yum yum I think now I will go and eat.

Brazilian Lemonade

I have now have made this twice. The first time without a strainer. You need a strainer. It tastes great. I got the recipe from our best bites cookbook. I love the sweet and condensed milk in it. My mom used to make something like this for us when we were little. It is very good and refreshing.

Cream Puffs

After cooking and stuffing with chocolate pudding.
Before cooking.
I made cream puffs to take up to the church for the treat for the people that clean the church but we ended up eating them over at the Hafen home. And everyone enjoyed them. So that was a good sign. I made them bite size and put chocolate pudding inside of them and they were delicious.I got the recipe from Our Best Bites.

Tres Leches Cupcakes

Tres Leches Cupcakes
Recipe by Our Best Bites

8 oz. evaporated milk

1 can sweetened condensed milk 24 white cupcakes (try this or this recipe)

1 pint whipping cream, divided

3-4 Tbsp. Hershey’s Caramel Syrup

Sliced fresh fruit (like strawberries, mangoes, and kiwis, optional)

Juice of 1 lime (optional)

Bake cupcakes according to recipe directions in FOIL LINERS. This is extremely important because it helps contain the milk mixture.

After cupcakes have cooled, use a bamboo skewer to poke several holes in each cupcake. Set aside.

In a medium bowl, whisk together the evaporated milk, sweetened condensed milk, and 3/4 c. of whipping cream. Use a ladle to pour the milk mixture over each cupcake. There might be some runover. Such is life with tres leches cupcakes. Place the cupcakes in the refrigerator until ready to serve.

When ready to serve, beat the remaining 1 1/4 c. of whipping cream until medium peaks form. Gently fold in the caramel syrup and pipe or dollop the whipped cream on each of the cupcakes. If desired, toss the sliced fruit with the lime juice and top the cupcakes with the sliced fruit. Serve on a small plate with a dessert spoon.

This was so super yummy . Everyone just loved them. My friend suggested that we make them and we did. Just loves bestbites.com

Penne with sausage, red potatoes and greenbeans

This is a great dish the Italian sausage was to strong for the kids. This would be a great dish in the summer with fresh green beans. We even got to share some with the Jolley family. I just love the Food Nanny recipes and ideas. I really like theme nights. It has been easier to make a menu and stick with it.

Make my own windex

This is not to eat. But it was a new recipe and I wanted to try it. I made my own windex. I got the recipe off of Crazy Domestic. It was actually quite easy. And it works very good. Just be careful in putting the food coloring that you do not get it all over your fingers like I did.

I saw this idea on gourmet mom site. So I thought I would give it a try and we had breakfast for dinner with orange julius and our groundhog looking out of the mound. Easy and fast and the children loved it. Plus it was super easy. A doughnut hole and then I made pancakes. Plus it was yummy you can not beat that.

Valentine Smores

This way was a stretch I found this from be different act normal and from there you go to Cray domestic.com. Which I found the recipe. Well I did not pay close attention to the crust part of the recipe. So I did not freeze my I was in a hurray. Emma wanted to help and I like for projects to get done. So we did the marshmallow in the chocolate and mushed them into the graham cracker crust. And then dipped them in chocolate. They tasted great. And she was able to give these to 15 of her friends.

Liz crescent rolls

I found this yummy recipes in my Food Nanny cookbook. I love that you basically only cook them for 10 min. And they turn out great. I was glad that Emma wanted to help roll and cut them out. They were great. We even used them for Sunday dinner and for tonight meal.

Eclair Squares

I got this recipe from got chicken . I just think this blog is fab. And I love eclairs. So I gave it a try. And this was all that was left. So I hurried and took a picture we put carmel and chocolate sauce on top. Which it became delicious. I was glad we could share it with Seval, Jade, Jylinn and Michelle. So I think I will make this again it was super yummy and not to bad to make the yellow is pudding with cream cheese and cool whip on top . Super easy to make.

Color Glass Jello

I was in the mood for Jello and wanted to try this color glass jello. Well I made it on saturday night and then early saturday morning I finished it. I think the reason it went pink it was to be white. Is because the hot white and knox blox and condsened milk were still hot. So it is important that this cools down if you want it to be white. I used blue, peach, rasberry jello for my glass. This is a very yummy jello. It just takes a little time and fridge time.

Hot artichoke and spinach dip

I was craving applebee's dip. But the recipe I got with Knorr dip. I do not think that I put enough cream cheese and I think way to much spinach. and I put cheddar instead of montery cheese. We ate it with cheese and sourdough bread. Which I found out that Jacob hated sour dough bread. Emma liked it and Drew tolerated it. Drew would not try any of the dip and niether would Jacob. Emma liked it. Jonathan ate as much as I thought he would. So I do not think that I will be trying this dip again. Not a very good number in how many people liked it. Pictures later this week.

Homemade Carrot cake and frosting to.

I decided to make homemade carrot cake. I was remembering a time when my mom was in a cake decorating business and how much she made carrot cake for the new brides and grooms. That was her #1 cake flavor. I have not had homemade carrot cake for such a long time. I found this recipe in the cooking nanny book that I just love. And I made almond frosting to go with it I just don't know where I put the picture of the frosted cake if I find it I will put it up. But this cake was so moist and delicious and no I did not put any raisins in it. I even graded the carrots with my salad shooter. So thumbs up for this great cake. I gave the other half to Sister Mitchell I owed her a desert that she paid for at our RS auction.

Sausage and gravy biscuits

I made this last night for dinner. Alll from scratch. The gravy was great. But the biscuits were to thin and they were to close to the burner. But everyone ate them. So I need to retry making biscuits. It made me upset that they did not turn out just right.
