3. Cook new recipe.

Chocolate Fudge Pie


The first I got from the American Profile magazine that came with the paper it looked so good on the cover that I just had to try it.
It is Chocolate Fudge Pie by Perry Schwartz from Cornersville, TN he is a chef.
So here is the recipe
Chocolate Fudge Pie
2 deep dish pie crusts.
Filling
1cup butter
4 ounces semi-sweet chocolate
2cups sugar
4eggs
2Tbs vanilla
3/4 cup flour
2/3 cup cocoa powder

Topping
4oz cream cheese softened
1/3 cup heavy cream
1 Tbs lemon juice
3/4 cup powder sugar

1.Pre heat oven to 350
2. prick the bottom and the sides of pie crust with a fork in several places.Bake 5 minutes.Remove from oven and. Reduce heat to 325.
3.To prepare filling, melt butter and chocolatein a double boiler over low heat.Mix well and remove from heat.
4.Combine sugar and eggs in a medium bowl. beat at medium speed for 10 minutes until ribbon forms. Add vanilla.
5.Combine flour and cocoa in a bowl mix well. Use a firm spatula.fold melted chocolate into egg mixture.Add flout mixture into and stir until just blended. Pour into pie crust. Place on baking sheets and bake for 50 minutes. The pie is done when it is puffed and cracked. Remove from oven sit out for 20 minutes then fridge over night.
6. Topping- Combine cream cheese, heavy cream, and lemon juice blend on medium speed until wel blended reduce speed and add powder sugar in.
Drizzle on pie before serving.
Bakes 2 pies Serves 16

This was very good . Especially if you love fudge. I think it might just be a little to rich for my family. The 2nd pie I took over to the Kastanes family. So I will find out what their take on it is.
